Rowan likes muesli with yogurt and fruit. This is a big deal because when he is rejecting every other food under the sun, I can always make a muesli/yogurt/fruit concoction, and he eats it up. Then I can go to bed knowing the kid has something healthy in his belly. Which means there have been some days where Rowan has had muesli at breakfast, lunch and dinner.
Muesli
Mix rolled oats, coconut and cinnamon together and lay evenly on an ungreased or parchment-lined cookie sheet. Lightly toast in the oven for 10-15 minutes. Watch mixture as coconut can burn quickly. Set aside to cool.
Mix rolled oats/coconut mixture in a bowl with the remaining ingredients. Store in an airtight container.
