HOMEMADE LARABARS

Rowan loves these bars. They are easy to make and so tasty. I love that I can pack them in zip lock bags, and they travel well. This version is based on the recipe I found on Chocolate Covered Katie. It is a variation on her yummy Oatmeal Raisin Larabar.

Homemade Larabar

1/2 cup quick oats

1 cup raisins
1/4 cup dates
1/2 cup walnuts
1/2 almonds
1/4 teaspoon salt
1/4 teaspoon vanilla
1/8 teaspoon water if needed

Grind oats in food processor or blender until pulverized. Add all the remaining ingredients except water then blend until well ground and evenly combined. Take out of the processor and work with your hands to unify. If the mixture is too dry add a small amount of water.

You can make these into balls or bars. For making bars, I press mixture into a small 5″ x 7″ rectangular parchment-lined baking dish to help form the shape. You can form them by hand too or in any dish that you have on hand. I let it chill in the refrigerator for about 30 minutes. Remove and cut into your desired size bar. I cut it into 10 or 15 squares.

Store in an airtight container in the refrigerator. You can freeze these as well.

    These do look great, I too was looking for the chocolate! Lol! Actually it's nice to have a non-chocolate treat, and this would be nice to pack for my kids for snack-time at school!
