APPLE SLICES WITH BLUEBERRY YOGURT DIP


In the quest for healthy snack to change it up for Rowan, we made this yummy dip to go with his morning apple. It was super quick to make and he “helped” with the mixing and gobbled up the apples. Oh, and so did I.

Apples Slices with Blueberry Yogurt Dip

1/2 cup blueberries
1 teaspoon water
1/2 cup full fat greek yogurt
1/4 cup cream cheese
1/2 teaspoon good vanilla
1/2 teaspoon lemon zest

Cook blueberries and water on medium heat until blueberries are soft. Crush berries with a fork and stir until mixture is smooth. Set aside to cool. If you prefer, this step can be done in the microwave.

In a medium size bowl, combine remaining ingredients. Add cooled blueberries and stir well.

Slice up the apple anyway you like and dip. The sweetness of the apples and blueberries works well with the tartness of the yogurt and cream cheese.

    That looks really good. One of my goals this summer is to pick blueberries and strawberries and freeze them for winter. Have you ever done that?

      No I have never tried it, but it sounds like a great idea! I wanted to try and make strawberry and blueberry jam this summer. We have a great you pick farm nearby. I will also try to freeze.

    This sounds like a great snack for me too!! Especially in the mid morning as I'm running around, also this would make a great after school snack for my kids! Thanks!!
