CASHEW LEMON BARS

The cashew nuts makes this sweet and a tad creamy. I love these bars because I really don’t feel guilty giving them to Rowan for dessert or a snack. This flavor combination is one of my favorites. So good.

Cashew Lemon Bars

2 cups raw cashews nuts
1 cup raisins
2  dates
1/4 teaspoon vanilla extract
1/4 teaspoon salt
Zest of one lemon
Juice of 1/2 a lemon

In a food processor, pulverize cashew nuts until they are about the size of bread crumbs. Add the remaining ingredients and process until well incorporated and sticking together. If the mixture seems too loose, add a little more lemon juice. On a cutting board form the mixture into a square or you can put it into a small baking dish. Wrap in parchment or cling wrap, and chill for about 1/2 hour. Cut into bars.

      I made these yesterday. They are sooooo good! Thanks so much for sharing the recipe. My husband and kids loved them and my husband doesn't even like raisins. I think I may try them with craisins next time for him. Thanks again!

      I am so glad you liked them! They are good huh? I think making them with Craisins would be delicious! I also sometimes make them without the raisins and more dates. Yummy!
