Chocolate Chip Cookie Cashew Bars

Why have I not made these before?! They are so good. Last night, I was having a major craving for chocolate and remembered how much I loved the Chocolate Chip Cookie Dough Larabar. I love these bars because I can make them so quickly and always have something sweet on hand. I use dark chocolate chips to keep them as healthy as I can. You can use whatever chips you like.

Chocolate Chip Cookie Cashew Bars

1 cup raw cashew nuts
3/4 cup dates
1/3 cup dark chocolate chips
2 teaspoons unsweetened cocoa powder
1 teaspoon good vanilla extract
1/4 teaspoon salt

Combine all the ingredients in a food processor. Blend until well chopped and incorporated about 2 minutes. Place mixture on a cutting board and press together. Then, shape into a rectangle and wrap with parchment or plastic wrap. Refrigerate for a minimum of 1/2 hour to set. Cut into into a squares/rectangles.

Store in an airtight container.
