We quickly made these this morning. They are super delicious, and they are not time consuming. They come out crispy on the outside and soft on the inside making them a super healthy replacement for chips.
Roasted Garlicky Chickpeas
1 19 oz can of chickpeas
3 cloves of garlic
1 tablespoon olive oil
Sea salt
Preheat oven to 400 degrees.
Rinse, drain and dry chickpeas then set aside in a medium sized bowl. Smash garlic with the back of a knife and chop into a fine dice. Add garlic and olive oil to chickpeas. Toss mixture until well coated. Transfer mixture to a foil or parchment-lined cookie sheet and spread out in a single layer.
Bake for 20-25 minutes, tossing midway through baking. Season to taste with salt.
