I made these bars with coconut oil instead of butter for a healthy fat bar. These are low in sugar and contain a tablespoon of flax seed for your Omega 3’s. The coconut and raisins add some extra sweetness.
I don’t feel guilty letting Rowan snack on these healthy bars. Plus, he has been pickier than usual lately, so if he eats a couple of these and some strawberries for a meal, I feel ok with myself. They also make a nice breakfast and freeze well. Try them!

Coconut Oatmeal Raisin Bars

3/4 cup coconut oil
1/2 cup light brown sugar loosely packed
1 egg
1 teaspoon vanilla extract
1/2 cup + 1 tablespoon sifted whole wheat flour
1 tablespoon flaxseed meal
1/2 teaspooon baking soda
1 teaspoon cinnamon
1/8 teaspoon salt
1 cup rolled oats
3/4 raisins
1/2 cup unsweetened coconut
Other ideas: Try replacing the raisins with chocolate chips and walnuts or pistachios.

These sound delicious! I've never used coconut oil, I'm intrigued to try it.
I added walnuts and chia seeds and a little egg whites to the mixture. They're in the oven right now, but smell sooo delicious.
