This morning we ate breakfast standing up. There are construction workers at our house doing some work right outside our deck. A cement mixer is involved which means there would be no sitting inside at a table eating.
I made these yummy mini muffins, and we ate them while ogling our new construction worker friends.

Mini Banana Nut Muffins
2 cups whole wheat flour
1 1/4 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon cinnamon
1 egg
3 tablespoons coconut oil
1/4 cup honey
3 large ripe bananas mashed
1/4 cup milk
1 teaspoon vanilla
1/2 cup walnuts
1/4 cup chocolate chips or raisins
Preheat oven to 350 degrees. Grease muffin pan or spray with cooking spray.
In a medium bowl mix together flour, baking powder, cinnamon and salt. In a separate bowl beat together the egg and honey. Add coconut oil, mashed banana, milk and vanilla extract. Then add dry ingredients, and stir until incorporated. Fold in nuts and chocolate chips.
Pour mixture into muffin tins about 3/4 full. Makes about 24 mini muffins or 12 large muffins.
Back for 15 minutes, oven times vary. Done when a toothpick inserted into the center comes out clean. Let cool on a rack.
This recipe calls for honey to be mixed with the egg but you never state how much honey. I just made the recipe and guessed how much but it wasn't the correct amount and they came out a little dense. Can you update so I can make them again please. They are delicious but would love to get the correct amount. Thanks!!
Thanks for letting me know! I just added 1/4 cup honey which should do the trick. If your bananas are nice and ripe, along with the chocolate chips there should be enough sweetness. If your muffins are coming out dense you can try sifting the whole wheat flour. That lightens things up a bit. Thanks again!
