I have fond memories of hot Florida summer days riding my bike to the local 7-11 for the coveted ice cold slurpee. It came in three spectacular flavors: red, neon blue and cola. I was always fan of the “red” and reveled in it’s artificial, sugary sweetness. My present self shutters at the large doses of chemicals that I must have ingested in my youth. So much tongue staining, red and blue dye flowed through my veins during my preteen years it is a miracle my sweat was not pink or florescent blue.
Well, here is a simple, healthy version that I promise is much better that those red 7-11 slurpee masterpieces. The watermelon is sweet this time of year, so a sweetener was not needed. However, if you find it a little tart, add a touch honey and that should fix things. As it melts, stick a straw and slurp away.
Watermelon Mint Slushy
1 cup of frozen watermelon cut into cubes
2 mint leaves
Remove seeds and cut watermelon into cubes. Place in the freezer for a few hours to freeze. Add frozen watermelon cubes and mint leaves to a blender and blend on high. Blend for a few minutes to allow the cubes to melt a bit creating the slushy. Spoon out slush and serve.
You can eat it with a spoon until it melts then drink with a straw.
