The other day Rowan and I were leaving the YMCA, and passed by the (not so healthy) snack bar. My three year old’s little eyes made a b-line for the Ritz peanut butter cracker sandwiches snack packs. I thought, crackers and peanut butter, how bad can that be? I flipped the package over and took a quick look at the ingredients list. In case you did not know, there are THIRTY ingredients in Ritz Crackers Peanut Butter Crackers. Peanut butter does not show up until number FIFTEEN only after the four partially hydrogenated oils. If you read farther down you get your high fructose corn syrup and MSG. Luckily, I had some decent snacks in my bag, so I was able to distract Rowan and avoid any major meltdowns. After leaving the Y, I did get inspired. I decided to make a quick replica of the snack that Rowan could actually eat without me dying of guilt.
These Back to Nature Classic Round crackers have a decadent buttery flavor, but with just about 7 ingredients. The peanut butter had one ingredient: organic peanuts. I chilled the peanut butter, so that it spread firmly and made less of a mess. Then, I wrapped them up in a zip lock bag, so that looked like a cute snack pack for Rowan.
