

As mentioned early, we had quite the bounty of citrus fruits in our yard this weekend. Even after giving away a ton of lemons we still had plenty. Making lemonade was fun. It felt like an old fashioned thing to do on a hot summer day. Something my grandmother would have made to stay cool. We used honey because honestly that is what we had. We also have a huge amount of mint so were threw that in there too.
Mint and Honey Lemonade
8 cups of water
8 lemons, juiced
1/2 cup of Honey
2 tablespoons chopped mint
Ice
Warm water on the stove and add honey. Stir until it is dissolved. Remove from heat and add mint and lemon juice and chill. Pour into a pitcher and add ice and a few lemon slices. Serve.
this is one of my favorite summer drinks. i planted some mint a few years ago and every year now i have more than enough to make this all summer long … now if i could only have a lemon tree!
