Quick treat: Almond Butter Bark

 

I have been making some changes to my diet lately. I started out trying the Paleo diet which was great and super healthy. BUT, I will admit I am not able to sustain it 100%. I am doing my best to stay away from gluten, and I don’t eat any processed goods, so that’s a good thing. I do have a sweet tooth, so when I found this recipe, I was thrilled. Also, it takes about 5 minutes to put together though you do have to wait the hour it takes to set in the freezer. Whether you are on a Paleo diet or not, these are a good thing.
This is a great recipe that your kids can make all by themselves. Since you are just mixing a few gooey ingredients in a bowl, putting this together is fun. Plus, I bet you have all these ingredients in your kitchen right now. Oh and it is so rich, a little goes a long way. 

Almond Butter Bark

1/3 cup coconut oil
1/4 cup almond butter
2 tablespoons coconut flakes
2 teaspoons honey
1/8 teaspoon almond extract (optional, just gives it a hit of flavor)
1/4 teaspoon Sea Salt

Mix all of the ingredients in a bowl. Spread on parchment paper. Freeze for an hour.

    this looks and sounds delicious. we've all been gluten-free for over a year now at my house and there's just no way i'd ever want go back to eating it (not that we could, but it's nice know i wouldn't want to). i'd love try paleo for myself but i do think that would be hard (i love cheese too much!). but i've found GF to be so easy with meals – grab and go snacks are a little bit tricker, so i love recipes like this!

      I definitely feel a lot better now that I am eating this way. I don't crave breads and gluten anymore. My love for cheese (and my occasional ice cream!) is what keeps me totally Paleo.

    This looks like a great way to get in a bunch of healthy fats! And, since they're super filling, I bet it keeps you full for a long time. Even though I love chocolate, I love that this uses almond butter instead to switch things up. Pinning for sure ๐Ÿ™‚

    Sounds like we probably have a similar diet as well. I eat mostly paleo, but still eat high quality dairy and a few other things.
