




This snack happened one night because I was starving, and there was very little in the fridge. But, there was a bunch of zucchini that was supposed to be for dinner the next night. I started slicing zucchini, and then spotting a tub of cream cheese, I began spreading the slices. I stood at my kitchen counter making and eating these little sandwiches, and they did the trick. The sea salt and cumin put these bites over the edge from a weird made-up midnight snack, to something with good flavor and crunch.
I made a bunch of these for Rowan’s snack this weekend. I have to admit that he only ate one, and Oreo style, licking the center, but leaving the zucchini slices behind, sigh. I, on the other hand, happily ate the rest.
Zucchini Bites
Zucchini
Cream cheese
Sea Salt
Cumin powder
Thinly slice zucchini into about 1/4 inch slices. Spread each slice with cream cheese and a sprinkling of sea salt and cumin powder. Top with another thin slice of zucchini. These should be eaten within the hour of making them. The zucchini will start to sweat and get a bit soggy.
