Healthy Chewy Granola Bars

Here is a quick little post of a recipe I wanted to share. It is a chewy granola bar that I have been making for quite awhile that makes a yummy treat for summer afternoons or a school lunch box. I also am including a printable of this tag, so you can make them to share. We have brought them along for play dates or dinner dates or just a nice thank you to a friendly neighbor. Enjoy it.

Chewy Granola Bars

Ingredients

2 cups quick cook oats

1/2 cup almond flour

1/2 cup old fashioned oats

1/2 cup chopped walnuts

1/4 cup coconut flakes

3/4 cup brown rice syrup

1/4 cup brown sugar

1/2 cup peanut butter

1 teasponn cinnamon

1/8 cup coconut oil

1/2 teaspoon baking soda

1/2 teaspoon almond extract

1/2 teaspoon vanilla extract

1/2 teaspoon salt 

1/2 cup chocolate chips 

Instructions

Preheat oven to 350 degrees.

Warm brown rice syrup, peanut butter, vanilla, almond extract, salt or medium heat. Add coconut oil. In a big bowl mix the dry ingredients. Add wet ingrediants to large bowl and stir to combine. Add 1/4 cup of chocolate chips and lightly stir.

Line a 9 inch pan with parchemnt paper, and press mixture firmly into the pan. Sprinkle remaining chocolate chips on top and press again.

Bake for 10 minutes. Remove from the oven. Cover with parchment paper and press mixture firmly while still warm. Let cool completely in the refrigerator for about 2 hours.
